Spinach, Avocado, Citrus Salad with Citrus Vinaigrette
This is a great late fall and winter salad right when oranges are at their best!
Prep Time: 20 minutes.
Ingredients:
10 oz baby spinach leaves (or about 6 cups tightly packed)
2 navel oranges, peeled and segmented
1 large avocado, sliced
1 large English cucumber - peeled, seeded and sliced
½ cup slivered, or sliced almonds
½ cup of shredded hard cheese – gruyere or parmesan are nice options (grate the cheese yourself as pre-shredded cheeses often contain starch or anti-caking agents)
Dressing
2 tbsp lemon juice
2 tbsp orange juice
2 ½ tsp Dijon mustard
1 tbsp honey
1 tsp fresh thyme, finely chopped
¼ cup extra-virgin olive oil
Salt and pepper, to taste
Directions:
For the dressing, whisk together all ingredients except for oil. Slowly whisk in the olive oil until well combined.
To serve, toss the salad ingredients with the dressing..
Sprinkle with almonds and cheese.
