Almond Flour Seed Crackers
We have been perfecting our crackers around here - we do a combo of mostly almond flour with a little oat (or coconut) flour and add a bit of flax meal (or sunflower seeds.) You can also play with your spices. Mine are never the same size and some have rough edges - (not a perfectionist) but they taste great! Yummy with any dip or salad!
Prep time: 15 minutes Cook time: 20 minutes
Ingredients:
1 cup almond flour
¼ cup oat flour (can sub with coconut flour)
3 TBSP ground flax meal or 3 TBSP sunflower seeds
¼ tsp sea salt
1 TBSP dried oregano, thyme or chives - any combo
1 tsp onion powder
1 tsp everything bagel spice
1 TBSP tahini
2 TBSP olive oil
1 egg, beaten
Directions:
1. Preheat your oven to 325 degrees.
2. Beat together the tahini, olive oil and egg.
3. Add the rest of the ingredients. Knead with your hands until a ball of dough forms.
4. Between 2 sheets of parchment paper, roll out the dough to about ⅛” thick. Remove the top sheet of parchment paper and cut the dough into something that resembles crackers (whatever size you want) with a pizza cutter.
5. Transfer the bottom sheet with dough onto a baking sheet - sprinkle with more salt
6. Bake in the oven for 15-18 minutes or until golden brown.
7. Allow to cool completely and then separate into crackers.
8. Store at room temperature in an airtight container for a few days.
