Apple Cake
This is a delicious cake for Rosh Hashanah or any time you want an autumnal treat!. Honeycrisp, Envy or sweet Cosmic apples are great in this recipe!
Prep Time: 20 minutes Cook Time: 30 minutes
Ingredients:
2 red apples - shredded with all the juice
1/3 cup olive oil (or coconut oil)
1/3 cup honey
1 tsp vanilla extract
3 eggs
3 cups almond flour
1 cup shredded unsweetened coconut
1/4 cup slivered almonds
Directions
Preheat the oven to 350 degrees and grease a ceramic pie tin or line the bottom with parchment paper.
In a large bowl, whisk together apples, olive oil, honey vanilla, and eggs.
Stir in the almond flour and shredded coconut.
Mix well!
Pour batter into the pan and sprinkle with slivered almonds.
Bake for 30 minutes. Let cool in pan.
